nuts about nuts!


Red wine and warmth

Here is a little easy crowd pleaser! good for all the nights in when its raining and you don't want to get your hair wet!





Preheat oven to 200c

400g of mixed nuts (make sure you have walnuts they add a lovely warmth to the mix)
20g Sweet paprika
10g curry powder
10g hot paprika
5g sea salt
20g olive oil


place all ingredients on a tray that has been lined with grease proof paper. toss the nuts so they get coated in oil and spices. place in oven for 10mins then pull out of oven and toss around, place bk into oven for a further 5 mins. once they have browned a little pull out and serve warm or cold with some delicious wine..

caramel dream!


confession time!!I am defiantly have a tenancy towards being OCD! this is the reason the lifeguards are getting slices at the moment!

however i love putting my own little twist on the old favourite, this week its the Caramel slice!to recreate this you will need::

1 hour out of you day!!

Step 1:
200g white flour
200g rolled oats
80g raw sugar
200g desiccated coconut (i like desiccated )
1/2 level teaspoon of nutmeg

Step 2:
200g butter
50g golden syrup

Step 3:
2 tins of 500g sweetened condensed milk
50g golden syrup
30g butter

Step 4: (you can just use one or the other this is just what i had in the cupboard! taste great though)
100g dark chocolate
150g milk chocolate
20g Cofa (this just makes it easier to cut mean the chocolate doesn't break)

Place all of step1 ingredients into a bowl and mix well! In a pot melt step2 together and then add to step1. once combined press into a slice tin, bake in a pre heated @ 170c for 10-15 just to golden brown.

Step 3:
Place condense milk in a heave based saucepan and cook over low heat for 8mins stirling continually so it doesn't burn, once colour turns golden add golden syrup and butter stir for a further 2mins. Pour this delicious carmel goodness over the base and bake in oven for 5mins till golden brown.

Step 4:
Put all ingredients in a metal bowl and carefully ment over simmering water our over slice and allow to cool!

Put the kettle on and serve to a Man you want to impress! its a winter and you will be a keeper!

slice of heaven

Here is what the local Bondi lifeguards are munching on this week!

Ingredients::
Step 1:
250g Rice Bubbles
200g plain flour
300g oats
125g shredded coconut
50g cranberries
40g sustains
30g Goji Berries

Step 2:300g butter
250g Manuka Honey
100mls of water
2 teaspoons of vanilla extract

Method::
Place Step 1 in a bowl and mix well. Step 2:In a saucepan melt the butter then add the honey, water and vanilla extract. add Step 2: to Step 1 and mix well press into a slice tin and bake for 15-20 mins till golden brown.

place a small amount of water in a saucepan and put on a low heat allow to simmer and then take off, in a metal bowl place 300g of yogurt buttons (these can be found at a heath food store if you can't find any just use white chocolate) place over the warm water and stir till melted and then pour over the slice. allow to cool and cut into slices.
